How To Prepare
Storage Upon Arrival: Keep chilled in the coldest part of your refrigerator (0–2°C) until ready to process.
Prep & Descaling: Gently scrape off remaining fine scales under cold running water using a fish scaler or the back of a knife. Pat thoroughly dry with paper towels.
Filleting: Perform a Sanbutsu-oroshi (3-piece fillet) for sashimi, nigiri, or cooking. Save the head and bones for an extraordinarily rich dashi stock (Ara-zaku).

Serving Suggestions
Sashimi / Yubiki Style: Slice thinly for raw sashimi, or try Matsukawazukuri (pour boiling water over the skin side briefly to crisp it, then shock in ice water) to highlight the rich umami layer right under the skin!
Classic Shabu-Shabu & Rice: Enjoy thin raw slices lightly swirled in hot kelp dashi (Shabu-Shabu) or simmered over Japanese rice (Tai-Meshi).
Salt-Grilling & Steaming: Salt-grill fillets or steam with ginger, scallions, and light shoyu to showcase the firm, succulent white flakes.

💡 Pro Tip: Don't discard the head! Split the Madai head in half and salt-grill it (Kabuto-yaki) or simmer it with soy, sake, and mirin (Kabutoni) for some of the juiciest, most flavorful meat on the fish!
